The Homestead Cooker is designed to be conventional non convection cooking.
The heat source in a regular convention oven is stationary, radiating from a heating element in the bottom of the oven.
If you are experiencing uneven cooking or burning top or bottom the stabilizing shelves to deflect and distribute the heat more evenly are recommended.
